Ingredients
  

Wet Ingredients
  • 2 cups apple cider To be reduced
  • 1/2 cup unsalted butter, softened At room temperature for easy mixing
  • 1 cup granulated sugar Can be substituted with coconut sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can be substituted with whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper.
  2. In a small saucepan, bring 2 cups of apple cider to a boil over medium heat, then reduce and simmer until it reduces to 1 cup.
Mixing Ingredients
  1. In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
  2. In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  3. Gradually add the dry mixture to the wet ingredients until combined. Slowly incorporate the reduced apple cider until smooth.
Baking and Serving
  1. Pour the batter into the prepared baking dish and bake for about 30-35 minutes or until a toothpick inserted comes out clean.
  2. Allow the cake to cool for about 10 minutes, then transfer it to a wire rack. Optionally, sprinkle with powdered sugar or maple syrup before serving.

Notes

Store in plastic wrap in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in microwave for 20-30 seconds or in the oven for 10-15 minutes at 350°F.
