Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper.
- In a small saucepan, bring 2 cups of apple cider to a boil over medium heat, then reduce and simmer until it reduces to 1 cup.
Mixing Ingredients
- In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
- Gradually add the dry mixture to the wet ingredients until combined. Slowly incorporate the reduced apple cider until smooth.
Baking and Serving
- Pour the batter into the prepared baking dish and bake for about 30-35 minutes or until a toothpick inserted comes out clean.
- Allow the cake to cool for about 10 minutes, then transfer it to a wire rack. Optionally, sprinkle with powdered sugar or maple syrup before serving.
Notes
Store in plastic wrap in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in microwave for 20-30 seconds or in the oven for 10-15 minutes at 350°F.
