Preparation
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan and set it aside.
- In a medium bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, nutmeg, and salt. Set aside.
- In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Beat in the eggs one at a time, followed by the apple cider and vanilla extract. Mix until just combined.
- Gradually add the dry ingredients to the wet mixture, gently folding until just combined. Be careful not to overmix.
Baking
- Pour the batter into your greased loaf pan. Bake in the preheated oven for about 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, allow the bread to cool in the pan for about 10-15 minutes before transferring it to a wire rack. Let it cool slightly before slicing.
Notes
Store in an airtight container at room temperature for up to 3 days or freeze slices for up to 3 months. Reheat slices in the microwave for 10-15 seconds or toast for a couple of minutes. Avoid overmixing to retain texture.
