For the Cheesecake Filling

  • 1 cup powdered sugar
  • 1 teaspoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition. Then add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, ground cinnamon, and salt.
  5. Gradually add the dry mixture to the butter mixture, alternating with the apple cider. Stir to combine until a dough forms.
  6. In another bowl, blend the softened cream cheese, powdered sugar, and lemon juice until smooth.
  7. Scoop a tablespoon of cookie dough onto the baking sheet, making a small depression in the center. Place about a teaspoon of the cheesecake filling inside the depression. Then, top with another tablespoon of cookie dough to cover the filling.
  8. Bake for 12-14 minutes or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
