Preparation
- Preheat your oven to 350°F (175°C). Grease baking sheets or line them with parchment paper for easy cleanup.
- In a large mixing bowl, combine the softened unsalted butter, granulated sugar, and brown sugar. Using an electric mixer, beat the mixture on medium speed until it is light and fluffy, approximately 3-4 minutes.
- Crack in the large egg and add the vanilla extract. Mix again until fully combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with pouring in the apple cider. Mix until just combined—do not overmix!
- In another bowl, beat the softened cream cheese and powdered sugar until creamy and smooth.
Assembly and Baking
- Using a cookie scoop or tablespoon, place one scoop of cookie dough on the baking sheet. Make an indentation in the center and fill it with a spoonful of the cream cheese mixture. Top it with another scoop of cookie dough, sealing in the filling.
- Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Remove and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
