Preparation
  1. Start by washing, peeling, and dicing your apples into small, bite-sized pieces.
  2. In a large bowl, combine the chia seeds, almond milk, maple syrup, and vanilla extract. Mix to ensure no chia seeds clump together.
  3. Fold in the diced apples and sprinkle in some cinnamon to taste.
  4. Cover the bowl and refrigerate the mixture for at least 4 hours or overnight.
  5. Once it has set, give it a quick stir before serving.
Serving
  1. Layer the pudding in glasses for a nice presentation and top with apple slices, nuts, or yogurt if desired.

Notes

Store in the refrigerator for up to 5 days. Freezing is an option, but consume fresh for best results. Reheat in short intervals if desired warm.
