Preparation
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, carefully make a pocket in each chicken breast by slicing horizontally, ensuring you don’t cut all the way through.
Mixing Filling
- In a bowl, combine the diced apple, Brie cheese, chopped thyme, salt, and pepper. Stir until everything is well mixed.
Stuffing Chicken
- Generously fill each chicken breast pocket with the apple and Brie mixture. Secure the opening with toothpicks or kitchen twine.
Cooking
- Heat the olive oil in a large, oven-safe skillet over medium heat. Add the stuffed chicken breasts and sear each side for about 3-4 minutes until golden brown.
- Once all sides are golden, pour in the chicken broth around the chicken (not over it) to keep it moist while baking.
- Transfer your skillet into the oven and bake for about 20 minutes or until the chicken is fully cooked through (internal temperature should read 165°F / 74°C).
- Allow the chicken to rest for a few minutes, then remove toothpicks or twine. Slice the chicken, drizzle some broth over the top, and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze well to prevent freezer burn. Reheat in the oven at 350°F (175°C) for 15-20 minutes.
