  • 2 cups chicken broth Use low-sodium if preferred.
  • 1 cup cooked shredded chicken Rotisserie chicken works well.
  • 1 tablespoon turmeric powder Add more to taste if desired.
  • 1 teaspoon ginger, grated
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1 cup spinach Fresh spinach is preferred.

  • 1 medium lemon, juiced Fresh lemon juice enhances flavor.

Method
 

Preparation
  1. In a large pot over medium heat, add a drizzle of olive oil, followed by the diced onions and minced garlic. Sauté for about 3–4 minutes, until the onions turn translucent and fragrant.
  2. Toss in the sliced carrots, mixing well with the onions and garlic. Cook for another 5 minutes, allowing the carrots to soften slightly.
  3. Sprinkle in the turmeric powder and grated ginger—stir to combine.
  4. Add the chicken broth to the pot, stirring well, and bring it to a gentle simmer.
  5. Once it’s simmering, add the shredded cooked chicken. Season with salt and pepper to taste.
  6. Stir in the fresh spinach and the juice of one lemon. Allow everything to simmer together for 5–10 minutes.
  7. Ladle the soup into bowls and garnish with your favorite toppings, such as fresh herbs or additional lemon juice, if desired.

Notes

If short on chicken broth, use vegetable broth for a vegetarian version. Avoid adding too much turmeric at once as it is potent. Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to a month.
