  • 2 cups crushed pineapple, drained Fresh pineapple can be used for more flavor.
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts Optional, can use walnuts or pecans.

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry mixture to the creamed mixture, alternating with the drained crushed pineapple. Stir until just combined. If desired, fold in the chopped nuts.
Baking
  1. Pour the batter into the prepared baking pan, spreading it evenly.
  2. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow the bars to cool completely before cutting into squares and enjoy!

Notes

For an extra touch, consider adding a glaze or sprinkling chopped nuts on top. Store leftover bars in an airtight container at room temperature for up to three days or in the refrigerator for longer freshness. Freeze for up to three months for longer storage.
