Preparation
- Preheat your oven to 375°F (190°C).
- Season the chicken pieces with salt and pepper on all sides.
- In a large, oven-proof skillet, heat the olive oil over medium-high heat. Add the chicken pieces and brown them on each side, about 3-4 minutes per side. Once browned, remove the chicken from the skillet and set it aside.
- In the same skillet, pour in the chicken broth and white wine, scraping up those golden bits stuck to the pan.
- Stir in the fines herbs and let the mixture simmer for a couple of minutes.
- Place the browned chicken pieces back into the skillet, skin-side up.
- Transfer the skillet to your preheated oven and bake for 25-30 minutes or until the chicken is cooked through.
- Remove the skillet from the oven, stir in the butter until melted, and the sauce is ready to serve.
Notes
For extra flavor, marinate the chicken in olive oil, salt, and herbs for an hour before cooking. Ensure not to overcrowd the pan when browning the chicken for even cooking.
