Ingredients
  

Main Ingredients
  • 1 cup almond milk (unsweetened, or sweetened to your preference) Ensure at room temperature for better blending.
  • 1 cup almond flour
  • 1/2 cup oats (rolled or quick oats)
  • 2 tablespoons honey or maple syrup Use honey for non-vegan option; maple syrup for vegan option.
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • to taste chopped nuts or chocolate chips Optional for stuffing and topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, oats, baking powder, and salt. Stir well.
  3. In a separate bowl, whisk together the almond milk, honey or maple syrup, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
  5. Scoop a tablespoon of the mixture and form it into balls. Place on a greased or parchment-lined baking tray.
Baking
  1. Bake for about 20 minutes, or until golden brown and firm to the touch.
  2. Let them cool for 5 minutes before transferring to a wire rack.
  3. Enjoy warm or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months. Reheat in the microwave for 15-20 seconds or in the oven at 350°F for a few minutes.
