- In a medium-sized bowl or jar, combine the rolled oats, cocoa powder, and shredded coconut. Give it a good mix!
- Pour in the coconut milk and add the sweetener (maple syrup or honey). Stir until everything is well combined.
- Fold in the chopped almonds to the oat mixture.
- Cover your jar or bowl and refrigerate overnight (or at least 4-6 hours) to allow the oats to soak up all those delicious flavors!
- When ready to enjoy, give it a good stir, and add any additional toppings you desire – perhaps some extra almonds or a sprinkle of dark chocolate.
Notes
Almond Joy Overnight Oats can be stored in the refrigerator for up to 5 days. Just ensure they are sealed tightly to lock in freshness. They are best enjoyed cold but can also be warmed if preferred.
