Ingredients

  • 2 cups almond flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder Ensure even rising

  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup sliced almonds Adds texture to the biscotti

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour and baking powder.
  3. In a separate bowl, whisk together sugar, eggs, and vanilla extract until smooth and fluffy.
  4. Gradually add the dry mixture to the wet mixture and stir until fully combined. Fold in the sliced almonds.
  5. Shape the dough into a log about 12 inches long and 3 inches wide.
Baking
  1. Bake the log for 25-30 minutes until golden brown.
  2. Let the log cool for about 10 minutes before slicing into 1-inch pieces.
  3. Lay the slices cut-side down on the baking sheet and bake for an additional 15-20 minutes until crispy and dry.
  4. Once done, let the biscotti cool before serving.

Notes

Store in an airtight container for up to 2 weeks, or freeze for up to 3 months. For an ultra-crunchy finish, adjust baking time slightly.
