  • 2 medium zucchinis, sliced into fries Fresh zucchini are recommended for best texture.
  • 1 cup breadcrumbs (panko for extra crunch!) Panko breadcrumbs provide a crispier finish.
  • ½ cup grated Parmesan cheese Add more for extra cheesiness if desired.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust according to preference.
  • as needed Olive oil spray (or your preferred cooking oil) To help achieve a golden brown color.

Method
 

Preparation
  1. Wash and dry the zucchinis. Cut them into fry shapes.
  2. In a bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Take each zucchini fry and lightly coat it in the breadcrumb mixture, ensuring it’s well covered.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Place the coated zucchini fries in the air fryer basket in a single layer. Make sure not to overcrowd the basket.
  3. Lightly spray the fries with olive oil to encourage browning.
  4. Cook for about 10-12 minutes, shaking the basket halfway through until they are golden brown and crispy.
Serving
  1. Remove from the air fryer and serve them hot with your favorite dipping sauce!

Notes

For best results, cut zucchini into even pieces and do not skip the oil spray for crispiness. Store any leftovers in an airtight container for 2-3 days. Re-crisp in the air fryer at 350°F for 4-5 minutes.
