  • ½ cup buttermilk
  • Zest of 1 lemon
  • Zest of 1 lime
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 2 teaspoons baking powder
  • ½ teaspoon salt

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  • Mix the Dry Ingredients: In one bowl, whisk together flour, baking powder, and salt.
  • Cream the Butter and Sugar: In another bowl, beat the softened butter and sugar together until light and fluffy.
  • Add the Eggs: Add eggs one at a time to the butter-sugar mixture, mixing well after each addition.
  • Incorporate Buttermilk and Citrus: Mix in buttermilk, lemon, and lime juice along with the zests for that amazing citrus kick!
  • Combine the Mixtures: Gradually add the dry ingredients to the wet mixture and stir until just combined. Do not overmix.
  • Fill the Cupcake Liners: Spoon the batter into the cupcake liners, filling each about two-thirds full.
  • Bake: Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  • Cool & Frost: Allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Once cooled, top with your favorite frosting!
