Ingredients
  

  • 8 ounces of elbow macaroni
  • 1 pound of ground beef or turkey
  • 1 medium onion diced
  • 1 bell pepper diced (your favorite color!)
  • 2 teaspoons of taco seasoning more if you like it spicy
  • 1 can 15 ounces of diced tomatoes (undrained)
  • 1 cup of beef or chicken broth
  • 1 cup of shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Sour cream and sliced jalapeños for serving (optional)

Method
 

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.
  2. Sauté the Vegetables: In the same pot, heat a tablespoon of oil over medium heat. Add the diced onion and bell pepper, sautéing until softened (about 3-4 minutes).
  3. Brown the Meat: Add the ground beef or turkey into the pot, stirring to break it apart. Cook until browned and cooked through (about 5-7 minutes). Drain any excess fat.
  4. Season Everything: Stir in the taco seasoning and diced tomatoes, mixing well. Pour in the broth, and bring to a simmer.
  5. Combine: Add the cooked pasta back into the pot and mix everything together. Simmer for an additional 2-3 minutes until heated through.
  6. Add Cheese: Remove from heat and stir in shredded cheese until melted. Season with salt and pepper to taste.
  7. Serve: Garnish with fresh cilantro and serve each bowl with additional toppings like sour cream or jalapeños!
