A Tropical Delight for Your Dinner Table

Ingredients
  

  • 1 can 20 ounces crushed pineapple, drained
  • 1 cup cottage cheese
  • 2 cups shredded cheddar cheese
  • 1 cup crushed butter crackers like Ritz
  • ½ cup sugar
  • 4 tablespoons melted butter
  • 2 large eggs beaten

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 2-quart casserole dish.
  2. In a large bowl, combine the drained crushed pineapple and cottage cheese. Mix until well-combined.
  3. Add in the shredded cheddar cheese, sugar, and beaten eggs. Stir everything together until nicely blended.
  4. In a separate bowl, mix the crushed crackers with melted butter until well-coated.
  5. Fold the cracker mixture into the pineapple and cheese mixture, saving a handful to sprinkle on top.
  6. Transfer the mixture to the greased casserole dish and spread it evenly.
  7. Top with the remaining cracker mixture.
  8. Bake for 30-35 minutes, or until the top is golden and bubbly.
  9. Remove from the oven, let it cool for a few minutes, then serve warm. Enjoy!
