Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter melted
  • 2 8 oz packages cream cheese (softened)
  • 1 cup granulated sugar
  • ½ cup butterscotch sauce plus more for drizzling
  • 2 large eggs
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  • reheat your oven to 325°F (160°C) and grease a 9x9-inch baking pan.
  • Prepare the crust: In a medium bowl, mix the graham cracker crumbs with the melted butter until well combined. Press this mixture firmly into the bottom of the prepared baking pan to create a solid base.
  • Make the cheesecake filling: In another bowl, beat together the softened cream cheese and sugar until smooth and creamy. Add in the butterscotch sauce, eggs, vanilla extract, and salt. Beat until everything is well incorporated and fluffy.
  • Bake: Pour the cheesecake mixture over the crust in your pan, smoothing it out evenly. Bake for 25-30 minutes, or until the center is set but slightly jiggly.
  • Cool: Allow the bars to cool at room temperature for about an hour, then refrigerate for at least 2 hours or until completely chilled.
  • Slice and serve: Once chilled, cut the bars into squares and drizzle with more butterscotch sauce if desired. Enjoy!
