A Sweet Slice of Comfort

Autumn is upon us, and with it comes the irresistible aroma of fall flavors wafting through the kitchen. One of the best ways to embrace this season is by baking a loaf of Chocolate Chip Pumpkin Bread. Imagine a soft, moist bread filled with sweet chocolate chips and the warming spices of pumpkin.

Ingredients
  

  • 1 cup pumpkin puree fresh or canned
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup chocolate chips semi-sweet or dark

Method
 

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.
  2. Mix Wet Ingredients: In a large bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well combined.
  3. Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, and pumpkin pie spice.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
  5. Add Chocolate Chips: Fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.
  6. Pour and Bake: Pour the batter into the prepared loaf pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Enjoy: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and indulge!
