Ingredients
  

  • 1 stick butter melted
  • 1 cup flour
  • 1 1/2 cup pecans chopped (reserve 3/4 cup for topping)
  • 1 16 oz. container Cool Whip
  • 8 oz. cream cheese softened
  • 1 cup sugar
  • 2 boxes Lemon Instant Pudding regular size (made according to box directions and refrigerated)

Method
 

  1. Prepare the First Layer: In a bowl, mix the melted butter, 1 cup of flour, and 3/4 cup of chopped pecans until well combined. Press the mixture firmly into the bottom of a 9 x 13 glass dish. Bake at 350°F for 10-15 minutes, or until it turns light brown. Allow it to cool completely.
  2. Create the Second Layer: In another bowl, blend the softened cream cheese and sugar until creamy. Fold in 1 cup of Cool Whip. Spread this creamy mixture evenly over the cooled first layer.
  3. Add the Third Layer: Prepare the Lemon Instant Pudding according to the package directions, letting it set in the refrigerator. Once set, spread the lemon pudding mixture over the second layer.
  4. Finish with the Fourth Layer: Top the lemon pudding with another layer of Cool Whip. Finally, sprinkle the remaining pecans on top for a delightful crunch.
