  • 2 packages 14.1 ounces each of refrigerated pie crusts
  • 4 cups fresh strawberries hulled and sliced
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 egg beaten (for egg wash)
  • Sugar for sprinkling on top

Method
 

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  2. Prepare Pie Crust: Roll out one package of pie crust and fit it into the bottom of a large baking sheet (approximately 18x13 inches), allowing the edges to hang over.
  3. Prepare the Filling: In a mixing bowl, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir gently to mix everything without crushing the strawberries.
  4. Fill the Pie: Pour the strawberry filling into the prepared crust, spreading it evenly.
  5. Cover the Pie: Roll out the second pie crust and lay it over the filling. Trim the overhang and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape.
  6. Add Egg Wash: Brush the top crust with the beaten egg and sprinkle sugar over it for some extra crunch.
  7. Bake: Place in the preheated oven and bake for 45-50 minutes or until the crust is golden brown and bubbly.
