  • 1 1/2 cups zucchini shredded (do not squeeze)
  • 1/4 cup green onion sliced (optional)
  • 2 large eggs
  • 3/4 cup sour cream
  • 1/4 cup butter melted and cooled
  • 1 1/2 cups cheddar cheese shredded
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

  • Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a loaf pan to ensure easy removal.
  • Prepare the Mixture: In a large bowl, combine the shredded zucchini, sliced green onions (if using), eggs, sour cream, and melted butter. Mix it all together until well combined.
  • Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Mix Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined - don’t overmix!
  • Add Cheese: Gently fold in the shredded cheddar cheese, ensuring it’s evenly distributed.
  • Transfer to Pan: Pour the batter into the prepared loaf pan, smoothing out the top to create an even surface.
  • Bake: Place the pan in the oven and bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
