The Lemon Icebox Cake is an iconic no-bake dessert that combines creamy lemon filling with layers of graham crackers, creating a sweet and tangy experience that's perfect for warm weather or any occasion.

  • 1 package graham crackers
  • 2 cups lemon filling or lemon curd
  • 2 cups whipped cream
  • 1 tablespoon lemon zest
  • 1/2 cup powdered sugar

Instructions
 

  • Layer Graham Crackers: Start by placing a layer of graham crackers at the bottom of a 9x13 inch baking dish. Make sure to cover the entire bottom.
  • Mix the Filling: In a medium bowl, combine the lemon filling, whipped cream, lemon zest, and powdered sugar. Mix until smooth and well combined.
  • Spread the Mixture: Spread a generous layer of the lemon mixture over the graham crackers. Don’t be shy—this is the star of the dish!
  • Repeat Layers: Add another layer of graham crackers on top of the lemon filling, and then add another layer of the lemon mixture. Repeat this process until you've used all the filling and graham crackers, finishing with lemon mixture on top.
  • Chill and Serve: Cover the dish and refrigerate for at least 4 hours, or ideally overnight to allow the cake to set properly. When ready to serve, slice and enjoy!
