- 12 oz of pasta such as rotini or penne
- 1 cup cherry tomatoes halved
- 1 cup cucumbers diced
- 1 cup bell peppers diced (choose a mix of colors!)
- 1/2 cup red onion finely chopped
- 1/2 cup black olives sliced
- 1 cup mozzarella balls optional
- 1 cup Italian dressing store-bought or homemade
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
Chop the Veggies: While the pasta cools, chop your cherry tomatoes, cucumbers, bell peppers, and red onion into bite-sized pieces. Toss them into a large mixing bowl.
Combine Ingredients: Add the cooled pasta to the bowl with the vegetables. Toss in the black olives and mozzarella balls if using.
Dress the Salad: Pour the Italian dressing over the pasta salad and mix gently until everything is evenly coated. Season with salt and pepper to taste.
Chill: For the best flavor, cover the bowl and refrigerate the salad for at least 30 minutes. This allows the flavors to meld together.
Serve and Enjoy: Once chilled, give the salad a good stir, garnish with fresh basil or parsley, and it's ready to serve!
