Prepare the Cake:
In a large mixing bowl, beat the eggs and sugar together until you achieve a thick, light mixture that leaves a groove when you lift the beaters.
Sift the flour and cocoa powder into the egg mixture, gently folding to maintain the airiness of the batter.
Preheat your oven to 180 °C (moderate). Grease and flour three medium cake molds.
Divide the batter evenly among the molds and bake for approximately 15 minutes, or until a toothpick inserted in the center comes out clean. Once baked, allow them to cool completely.
Prepare the Filling Cream:
In another bowl, beat the milk cream until it starts to thicken. Add the vanilla essence and icing sugar, continuing to beat until stiff peaks form.
Cake Assembly:
Place the first cake layer on a serving plate. If using, soak it with cherry liquor for added flavor.
Spread a generous layer of cream on top and dotted with cherries.
Place the second layer of cake on top and repeat the process.
Finally, add the third layer and cover the whole cake with the remaining cream.
Decorate with cherries and grated or melted semi-bitter chocolate on top.
Finish and Serve:
Let the cake chill in the refrigerator for a couple of hours to allow the flavors to meld together. Slice, serve, and watch as everyone falls in love with your incredible creation!
