Ingredients
  

  • 2 cups cooked beans pinto or black beans, or a mix
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 1 can diced tomatoes 14.5 oz
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese cheddar or your favorite

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add a splash of oil and sauté the chopped onions and bell pepper until softened (about 5-7 minutes).
  3. Stir in the cooked beans, diced tomatoes, chili powder, cumin, garlic powder, salt, and pepper. Mix well to combine all the ingredients.
  4. Transfer the mixture to a 9x13 baking dish and smooth out evenly.
  5. Sprinkle the shredded cheese on top of the bean mixture.
  6. Bake in the preheated oven for about 30-40 minutes or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it sit for a few minutes before serving. Enjoy warm!
