Ingredients

  • 4 large russet potatoes
  • 1 lb ground turkey
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 14.5 oz diced tomatoes
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings: shredded cheese sour cream, chives, avocado (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 425°F (220°C).
  • Prepare the Potatoes: Wash the russet potatoes thoroughly. Prick them several times with a fork to allow steam to escape while baking.
  • Bake the Potatoes: Place the potatoes directly on the oven rack and bake for about 45-50 minutes until tender.
  • Cook the Turkey Chili: While the potatoes are baking, heat a pan over medium heat. Add chopped onions and minced garlic, cooking until fragrant (about 2-3 minutes). Add the ground turkey, cooking until no longer pink.
  • Mix in Beans and Tomatoes: Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Let it simmer for about 15 minutes.
  • Assemble the Dish: Once the potatoes are baked, slice them open and fluff the insides with a fork. Spoon the turkey chili generously over each potato.
  • Add Your Toppings: Top with your desired toppings, like shredded cheese, sour cream, chives, or avocado.
  • Serve and Enjoy: Dig in and enjoy this hearty, soul-warming dish!
