  • 2 medium zucchinis sliced
  • 1 pound of boneless skinless chicken breasts, diced
  • 1 cup of cherry tomatoes halved
  • 1/2 cup of sun-dried tomatoes chopped
  • 1 cup of shredded mozzarella cheese
  • 2 tablespoons of olive oil
  • 2 cloves of garlic minced
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). On a large baking dish, drizzle olive oil.
