  • 1 lb boneless skinless chicken thighs or breasts, diced
  • 3 tablespoons vegetable oil
  • 4 cloves garlic minced
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 3 tablespoons soy sauce adjust to taste
  • 2 green onions sliced
  • Salt and pepper to taste
  • Optional: sesame oil for drizzling

Instructions
 

  • Preparation: Gather all ingredients and have them ready before starting. It speeds up the cooking process!
  • Cook Chicken: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the diced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
  • Sauté Garlic: In the same skillet, add another tablespoon of vegetable oil, then add minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn it.
  • Add Vegetables: Toss in the frozen mixed vegetables and stir-fry for another 2-3 minutes until heated through.
  • Add Rice: Add the cooked rice to the skillet. Break up any clumps and ensure the rice is well mixed with the garlic and veggies.
  • Combine Ingredients: Return the cooked chicken to the skillet. Drizzle with soy sauce and mix everything together for another 2-3 minutes until heated.
  • Garnish: Top with sliced green onions and drizzle with sesame oil if desired.
