The Salty Carrot & Goat Cheese Brownie is not just a dessert; it's an experience! These brownies are a unique twist on traditional sweet treats, blending savory and sweet elements that will leave your taste buds dancing.

Ingredients
  

  • 500 g carrots washed and peeled (keep the skin if organic)
  • 3 eggs
  • 100 g hazelnut puree
  • Salt to taste
  • Pepper to taste
  • 200 g wheat flour try using semi-wholemeal for added fiber
  • 1 tsp baking powder
  • 200 g goat cheese log crumbled

Instructions
 

  • Preheat the oven to 180°C (350°F). Grease and line a baking dish with parchment paper for easy removal.
  • Grate the carrots finely and set aside. This will help them incorporate better into the batter.
  • In a large mixing bowl, whisk together the eggs, hazelnut puree, salt, and pepper until well combined.
  • In another bowl, mix the flour and baking powder until evenly distributed.
  • Combine the dry ingredients with the wet mixture, stirring until just combined. Don’t overmix; a few lumps are okay!
  • Fold in the grated carrots and crumbled goat cheese making sure not to overwork the batter.
  • Pour the batter into the prepared baking dish and spread it evenly.
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool in the pan before slicing into squares and serving.
