Ingredients

  • ½ cup creamy peanut butter
  • ½ cup chunky peanut butter
  • ½ cup peanut butter chips
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups rolled oats
  • ½ cup chocolate chips
  • A drizzle of your favorite peanut butter sauce optional

Method

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper, allowing some overhang for easy removal later.
  2. Mix the Peanut Butters: In a large mixing bowl, combine the creamy peanut butter, chunky peanut butter, brown sugar, and granulated sugar. Mix until well combined.
  3. Incorporate Eggs and Vanilla: Add the eggs and vanilla extract, mixing again until creamy and smooth.
  4. Combine Dry Ingredients: In a separate bowl, combine the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined.
  5. Add Oats and Chips: Gently fold in the rolled oats, peanut butter chips, and chocolate chips until evenly distributed.
  6. Bake: Pour the batter into the prepared baking pan and spread it evenly. Bake for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool & Slice: Allow the cookie bars to cool in the pan for at least 10 minutes before using the parchment paper to lift them out. Slice into squares and enjoy!
