Prepare the Dough: In a large mixing bowl, combine the flour and salt. Cut in the shortening until the mixture resembles coarse crumbs. Gradually add water to form a smooth dough. Chill the dough for at least 30 minutes.
Roll Out Dough: On a floured surface, roll out the chilled dough to about 1/8 inch thick, and cut out circles using a round cutter.
Prepare the Filling: In a saucepan, mix the sliced fruit with sugar and butter over medium heat. Cook until the fruit is soft, then remove from heat and let it cool.
Fill the Dough: Place a spoonful of the cooled fruit filling in the center of each dough circle. Carefully fold over and seal the edges using a fork.
Fry the Pies: In a deep frying pan, heat vegetable oil over medium heat. Fry the pies, a few at a time, for about 2-3 minutes on each side or until golden brown.
Drain and Serve: Remove the fried pies from the oil and let them drain on paper towels. They are best served warm, sprinkled with cinnamon sugar if desired.
