Ingredients
  

  • 2 pounds of potatoes Yukon Gold or Russet work best
  • 1/2 cup of milk you can use cream for extra richness
  • 4 tablespoons of unsalted butter
  • Salt and pepper to taste
  • 1 small head of cabbage shredded
  • 1 medium onion finely chopped
  • 2 tablespoons of olive oil
  • Optional: Fresh herbs for topping like parsley or chives

Method
 

  1. Prep the Potatoes: Begin by peeling and cutting the potatoes into roughly equal-sized chunks. This helps them cook evenly.
  2. Boil the Potatoes: Place the cut potatoes in a large pot, cover with cold salted water, and bring to a boil. Cook until fork-tender, which should take about 15-20 minutes.
  3. Sauté the Cabbage and Onion: While the potatoes are boiling, heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Then, stir in the shredded cabbage and sauté until it’s wilted and slightly caramelized, about 8-10 minutes. Season with salt and pepper to taste.
  4. Mash the Potatoes: Once the potatoes are cooked, drain and return them to the pot. Add the butter and milk, then mash until your desired consistency is achieved. Season with salt and pepper.
  5. Combine and Serve: Finally, fold the sautéed cabbage and onion into the creamy mashed potatoes. Serve warm, garnished with fresh herbs if desired!
