Preheat the oven to 350°F (175°C) and grease your loaf pan or prepare cupcake liners.
In a mixing bowl, mash the ripe bananas until smooth, then mix in the melted butter until combined.
Stir in the sugar, followed by the beaten egg and vanilla extract. Blend all together until smooth.
In a separate bowl, mix the dry ingredients—flour, baking soda, and salt.
Slowly combine the dry mixture with the wet mixture. Be sure not to overmix; it’s okay if a few lumps remain!
If desired, fold in chocolate chips or nuts for added flavor.
Pour the batter into your prepared pan or fill the cupcake liners, about 2/3 full.
Bake in the preheated oven for 25-30 minutes for cupcakes, or 50-60 minutes for a loaf, until a toothpick inserted into the center comes out clean.
Let it cool for a few minutes, then enjoy fresh out of the oven or store for later!
