Ingredients
  

  • 3 ripe bananas mashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour
  • Optional toppings: Chocolate chips chopped nuts, or cream cheese frosting

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease your loaf pan or prepare cupcake liners.
  • In a mixing bowl, mash the ripe bananas until smooth, then mix in the melted butter until combined.
  • Stir in the sugar, followed by the beaten egg and vanilla extract. Blend all together until smooth.
  • In a separate bowl, mix the dry ingredients—flour, baking soda, and salt.
  • Slowly combine the dry mixture with the wet mixture. Be sure not to overmix; it’s okay if a few lumps remain!
  • If desired, fold in chocolate chips or nuts for added flavor.
  • Pour the batter into your prepared pan or fill the cupcake liners, about 2/3 full.
  • Bake in the preheated oven for 25-30 minutes for cupcakes, or 50-60 minutes for a loaf, until a toothpick inserted into the center comes out clean.
