Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples peeled and diced
  • 1/2 cup brown sugar for topping
  • 1 tablespoon cinnamon for topping

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan to ensure your bread comes out perfectly.
  • Mix Dry Ingredients: In a mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk until well blended.
  • Cream Butter and Sugar: In another large bowl, cream together the softened butter and granulated sugar until light and fluffy. This step is crucial for a nice texture!
  • Add Eggs and Vanilla: Beat in the eggs one at a time. Then add the vanilla extract, mixing until everything is well combined.
  • Combine Dry and Wet Ingredients: Gradually mix in the dry ingredients with the wet ingredients until just combined. Make sure not to overmix!
  • Fold in Apples: Gently fold in the diced apples, ensuring they’re evenly distributed throughout the batter.
  • Layer the Batter: Pour half of the batter into the prepared loaf pan, sprinkle the brown sugar and cinnamon mixture over it, and then pour the remaining batter on top.
  • Bake: Place the loaf pan in the oven and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool: Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
