These delightful little bites are everything you love about pizza—savory, cheesy, and perfectly satisfying—just nestled on a slice of fresh zucchini instead of traditional dough.

Ingredients
  

  • 2 medium zucchinis
  • 1 cup marinara sauce your favorite brand or homemade
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup sliced pepperoni optional
  • ½ teaspoon Italian seasoning
  • Olive oil
  • Salt and pepper to taste

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  • Prepare the Zucchini: Wash the zucchinis and slice them into about ½ inch thick rounds.
  • Season the Zucchini: Place the zucchini rounds on a baking sheet lined with parchment paper. Drizzle lightly with olive oil, and season with salt, pepper, and Italian seasoning. Make sure to coat both sides for maximum flavor!
  • Bake the Zucchini: Pop the zucchini in the preheated oven to bake for about 10 minutes. This step will give the zucchini a nice head start before you add the toppings.
  • Add the Toppings: Remove the zucchini from the oven and spoon a little marinara sauce onto each zucchini round. Top with a generous sprinkle of mozzarella cheese and any additional toppings like slices of pepperoni or vegetables.
  • Bake Again: Return the baking sheet to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.
  • Serve: Once your Zucchini Pizza Bites are done, let them cool for a minute before serving. Enjoy while still warm!
