Ingredients
  

  • 1 pound breakfast sausage
  • 2 cups pancake mix
  • 1 cup milk
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Optional toppings: maple syrup fresh berries, whipped cream

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Cook the sausage: In a skillet over medium heat, crumble and cook the sausage until no longer pink. Drain excess fat.
  3. Prepare pancake batter: In a bowl, combine pancake mix, milk, eggs, sugar, vanilla extract, and baking powder. Stir until well blended.
  4. Combine: In a greased baking dish, spread the cooked sausage evenly. Pour the pancake batter over the sausage.
