Ingredients
  

  • For the Brownies:
  • 1 cup 226g unsalted butter
  • 2 cups 400g granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup 125g all-purpose flour
  • 1 cup 90g unsweetened cocoa powder
  • ½ tsp salt
  • For the Chocolate Mousse:
  • 1 cup 240ml heavy cream
  • 1 cup 170g semi-sweet chocolate chips
  • 2 large egg whites
  • 2 tbsp granulated sugar
  • For the Ganache:
  • ½ cup 120ml heavy cream
  • 1 cup 170g semi-sweet chocolate chips
  • Step-by-Step Instructions:

Method
 

  1. Prepare the Brownies:
  2. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish. In a large saucepan, melt the butter over medium heat. Stir in the sugar, eggs, and vanilla until well combined. Remove from heat and mix in flour, cocoa powder, and salt until smooth. Pour the batter into your prepared baking dish and bake for 20-25 minutes.
  3. Make the Chocolate Mousse:
  4. While the brownies are baking, melt the semi-sweet chocolate chips in a microwave or double boiler. Let it cool slightly. In a separate bowl, whip the heavy cream until soft peaks form. In another bowl, whip the egg whites with granulated sugar until stiff peaks form. Gently fold the melted chocolate into the whipped cream, then fold in the egg whites until combined.
  5. Assemble the Layers:
  6. Once your brownies have cooled, spread a generous layer of chocolate mousse over the top. Refrigerate for 30 minutes to set.
  7. Prepare the Ganache:
  8. Heat the cream in a saucepan until steaming, then pour over the semi-sweet chocolate chips in a bowl. Let it sit for a couple of minutes before stirring until smooth.
  9. Final Touches:
  10. Once the mousse has set, pour the ganache over the top and spread it evenly. Refrigerate for another hour or until ready to serve.
