  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 2 cups mixed vegetables e.g., bell peppers, zucchini, carrots
  • 1 cup cooked quinoa or rice
  • 1 cup grated cheese cheddar or mozzarella
  • 1 can diced tomatoes 14 oz
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup breadcrumbs for topping

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 375°F (190°C).
  • Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onions and garlic, cooking until they become translucent.
  • Add Mixed Vegetables: Toss in your mixed vegetables and sauté for about 5 minutes until they’re tender.
  • Combine Ingredients: In a large mixing bowl, combine the sautéed vegetables, cooked quinoa or rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well to combine all the flavors.
  • Layer and Bake: Transfer the mixture to a baking dish. Top with grated cheese and sprinkle breadcrumbs over the top for a crispy finish.
  • Bake: Place the dish in the preheated oven and bake for about 30 minutes, or until the top is golden brown and bubbly.
