A Creamy Delight with a Kick

Ingredients
  

  • 200 g chocolate cookies
  • 80 g melted butter
  • 400 g cream cheese
  • 80 g sugar
  • 100 ml Baileys
  • 1 teaspoon soluble coffee
  • 7.5 g gelatin hydrated in 1/4 cup of water
  • 100 g grated black chocolate
  • Optional: whipped cream for decoration

Instructions
 

  • Prepare the Crust: Start by crushing the chocolate cookies into fine crumbs. Mix these crumbs with the melted butter until they’re well combined. Press this mixture firmly into the bottom of a springform pan to form a cohesive crust.
  • Make the Filling: In a large mixing bowl, beat the cream cheese, sugar, and Baileys together until you achieve a smooth and creamy consistency.
  • Add Coffee and Gelatin: Dissolve the soluble coffee in about 2 tablespoons of warm water. Once dissolved, add it to the cream cheese mixture, along with the hydrated and dissolved gelatin. Mix everything together until well incorporated.
  • Combine and Chill: Pour the cream cheese mixture over the prepared crust and smooth the top with a spatula. Refrigerate the cheesecake for a minimum of 6 hours or until it is set.
  • Decorate: Once the cheesecake is set, garnish with grated chocolate and, if you like, a dollop of whipped cream for extra indulgence.
