It’s not just food; it's a nostalgic experience that warms the heart. The best part? This recipe requires minimal effort, making it an absolute savior for busy weeknights, which means it’s ideal for families full of lively chatter and hungry tummies!

Ingredients

  • 1.5 lbs boneless skinless chicken thighs (or breasts)
  • 2 cups chicken broth
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 onion diced
  • 1 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 can 10.5 oz cream of chicken soup
  • 1 can refrigerated biscuits or homemade dough

Instructions

  • Prepare Your Chicken: Start by placing the boneless chicken thighs into the crockpot. Don't worry about chopping them; they’ll fall apart beautifully as they cook.
  • Add Your Vegetables: Layer in the diced carrots, celery, and onion on top of the chicken. These veggies add a lovely texture and sweetness to the dish.
  • Season: Add the garlic powder, dried thyme, salt, and pepper over the top. This is where the flavor begins to build!
  • Mix in the Broth and Soup: Pour in the chicken broth and stir in the cream of chicken soup. This is going to create a creamy, dreamy base.
  • Slow Cook: Cover and cook on low for 6-8 hours or on high for 4 hours. The chicken should be tender and cooked thoroughly.
  • Dumpling Time: About 30 minutes before serving, tear the refrigerated biscuits into quarters. Stir them into the chicken mixture, making sure they’re all coated with that delicious sauce.
  • Finishing Touch: Cover once more and let the dumplings cook for 30 minutes until they are fluffy and cooked through.
  • Serve & Enjoy: Once done, dish up a generous serving and make sure to drizzle a bit of the creamy broth over the top. Enjoy your comforting creation!
