Ingredients

For the stew
  • 2 lbs beef chuck, cut into cubes Use well-marbled beef for best flavor.
  • 2 cups apple cider Can substitute with apple juice for a milder sweetness.
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced For the stew.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
For the mashed potatoes
  • 2 lbs potatoes, for mashing
  • 1/2 cup milk
  • 4 tbsp butter

Method

Preparation
  1. Start by prepping your ingredients. Cut the beef chuck into bite-sized cubes, chop the onion, mince the garlic, and slice the carrots and potatoes.
Searing the Beef
  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then add it to the pot. Sear the beef for about 5-7 minutes until browned on all sides.
Adding Aromatics
  1. Add the chopped onion and minced garlic to the pot. Sauté for about 3 minutes until the onion is translucent and fragrant.
Building the Stew
  1. Pour in the apple cider and beef broth. Stir in the thyme and rosemary. Bring the mixture to a gentle boil.
Simmering
  1. Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
Cooking the Vegetables
  1. During the last 30 minutes of cooking, add the sliced carrots and diced potatoes to the pot. Allow them to simmer and soften in the rich broth.
Making the Mashed Potatoes
  1. While the stew is simmering, boil the 2 lbs of diced potatoes in salted water until fork-tender. Drain, then mash with the milk and butter. Season with salt to taste.
Serving
  1. Once the beef and vegetables are tender, taste and adjust seasoning. Serve the hearty stew in bowls topped with the creamy mashed potatoes.

Notes

Store any leftover stew in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to 3 months. Reheat on the stovetop and add a splash of milk to restore creaminess of mashed potatoes.
