Ingredients

Main Ingredients
  • 3 cups green tomatoes, chopped Use ripe, firm green tomatoes for the best texture.
  • 1 cup onion, finely chopped You can use yellow or white onions.
  • 1 cup bell pepper, chopped Any color bell pepper can be used.
  • 1 cup sugar Adjust sweetness according to personal preference.
  • 1 cup vinegar (preferably apple cider vinegar) Can substitute with white vinegar.
  • 1 tablespoon mustard seeds
  • 1 tablespoon celery seeds
  • 1.5 teaspoons salt

Method

Preparation
  1. Wash and chop the green tomatoes, onion, and bell pepper into small, uniform pieces to ensure even texture.
  2. In a large pot, combine the chopped green tomatoes, onion, bell pepper, sugar, vinegar, mustard seeds, celery seeds, and salt.
  3. Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and salt.
  4. Once boiling, reduce the heat to low and let the mixture simmer for about 20 minutes or until the vegetables are tender and the relish thickens slightly.
  5. Remove from heat and let the relish cool. Once cooled, transfer it to sterilized jars for storage, leaving some space at the top.
Maturation
  1. Allow the relish to sit in the refrigerator for at least 24 hours before serving to let the flavors meld together.

Notes

For a different twist, you may substitute green tomatoes with red tomatoes, understanding that the flavor will change. Ensure to use fresh, firm tomatoes to avoid a mushy texture. Refrigerate for up to 2 weeks and freeze in small portions for longer storage.
