Preparation
- Wash and chop the green tomatoes, onion, and bell pepper into small, uniform pieces to ensure even texture.
- In a large pot, combine the chopped green tomatoes, onion, bell pepper, sugar, vinegar, mustard seeds, celery seeds, and salt.
- Bring the mixture to a boil over medium heat, stirring occasionally to dissolve the sugar and salt.
- Once boiling, reduce the heat to low and let the mixture simmer for about 20 minutes or until the vegetables are tender and the relish thickens slightly.
- Remove from heat and let the relish cool. Once cooled, transfer it to sterilized jars for storage, leaving some space at the top.
Maturation
- Allow the relish to sit in the refrigerator for at least 24 hours before serving to let the flavors meld together.
Notes
For a different twist, you may substitute green tomatoes with red tomatoes, understanding that the flavor will change. Ensure to use fresh, firm tomatoes to avoid a mushy texture. Refrigerate for up to 2 weeks and freeze in small portions for longer storage.
