Cooking Steps
  1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until the chicken is golden brown, about 5-7 minutes.
  2. Stir in the minced garlic and diced bell pepper, cooking for another 2-3 minutes until the bell pepper softens.
  3. Add the cherry tomatoes and oregano, stirring well to combine. Cook for another 5-7 minutes, allowing the tomatoes to burst and create a flavorful sauce.
  4. Taste and adjust seasoning with additional salt and pepper if needed.
