  • 4 large eggs

  • 1/2 cup milk
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1 pinch nutmeg (optional) For added flavor.

  • 1 spray cooking spray or olive oil For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish with cooking spray or olive oil.
  2. In a skillet over medium heat, sauté the chopped spinach just until wilted, then remove from heat and let it cool slightly.
Mixing
  1. In a large mixing bowl, combine the cottage cheese, eggs, milk, black pepper, salt, onion powder, and optional nutmeg. Whisk until well blended and smooth.
  2. Fold in the sautéed spinach along with your shredded cheese of choice, mixing until evenly distributed.
Baking
  1. Pour the mixture into the prepared pie dish and bake in the preheated oven for about 30-35 minutes, or until the quiche is set and lightly golden on top.
  2. Once cooled slightly, slice and serve warm or at room temperature.
