  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 1.5 cups gouda cheese, shredded
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt

Preparation
  1. Preheat your oven to 475°F (245°C).
  2. If using store-bought pizza dough, roll it out on a floured surface to about a 12-inch round. If making homemade dough, prepare it according to your favorite recipe.
  3. In a bowl, mix the pumpkin puree with olive oil and salt. Spread the mixture evenly over the rolled-out dough, leaving a small border for the crust.
  4. Sprinkle the shredded gouda generously atop the pumpkin spread.
Baking
  1. Carefully place the pizza in the preheated oven and bake for about 20 minutes or until the crust is golden and the cheese is bubbling.
Serving
  1. Remove the pizza from the oven and let it cool for a minute. Slice and enjoy!

Notes

For Halal-friendly alternatives, consider using mozzarella or a dairy-free cheese if vegan. You can also substitute pumpkin with roasted butternut squash. Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze for up to 2 months. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
