Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine peanut butter and granulated sugar until well incorporated.
- Add the egg and vanilla extract (if using), stirring until smooth.
- Fold in the rolled oats gently until combined.
Baking
- Using a tablespoon or cookie scoop, drop the cookie dough onto a baking sheet lined with parchment paper, leaving space between each dough ball.
- Bake for about 10 minutes or until golden brown around the edges.
- Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container for up to 5 days. For longer storage, freeze in a single layer for up to 3 months. Reheat in the oven at 350°F for about 5 minutes before serving.
