Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter and granulated sugar until well incorporated.
  3. Add the egg and vanilla extract (if using), stirring until smooth.
  4. Fold in the rolled oats gently until combined.
Baking
  1. Using a tablespoon or cookie scoop, drop the cookie dough onto a baking sheet lined with parchment paper, leaving space between each dough ball.
  2. Bake for about 10 minutes or until golden brown around the edges.
  3. Remove from the oven and let cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container for up to 5 days. For longer storage, freeze in a single layer for up to 3 months. Reheat in the oven at 350°F for about 5 minutes before serving.
