Preparation
  1. Preheat your oven to 400°F (200°C).
  2. If your puff pastry is frozen, ensure it’s completely thawed. Roll it out on a lightly floured surface to fit your baking tray.
  3. Wash, pit, and slice the plums, making even slices for a beautiful presentation.
  4. Lay the plum slices evenly over the puff pastry, leaving a small border around the edges.
  5. Evenly sprinkle the sugar over the plums to enhance their sweetness as they bake.
  6. In a small bowl, beat the egg with a fork. Brush the edges of the pastry with the egg wash.
Baking
  1. Place the tart in the preheated oven and bake for 25-30 minutes, or until the pastry is golden and the plums are tender.
