  • 1/2 cup almond butter (or any nut butter of your choice)
  • 1/4 cup dark chocolate chips (melted)
  • 2 tablespoons honey (or maple syrup for a vegan option)

  1. In a medium mixing bowl, add shredded coconut, almond butter, melted dark chocolate chips, and honey. Stir until all ingredients are well combined and a sticky mixture forms.
  2. Place the bowl in the refrigerator for about 10 minutes to allow the mixture to firm up slightly, making it easier to roll into balls.
  3. Remove the mixture from the fridge. Using your hands, scoop out a tablespoon of the mixture and roll it into a small ball. Repeat until all the mixture is used.
  4. For an extra layer of chocolate, melt some additional dark chocolate chips and dip each coconut ball into the melted chocolate. Let them set on a parchment-lined tray.
  5. Place the finished coconut balls in the refrigerator for another 10-15 minutes to help the chocolate harden.
  6. Serve the chilled coconut balls on a platter, or store them in an airtight container in the fridge.

Notes

To ensure perfect chocolate coconut balls, if the mixture is too sticky, add a bit more shredded coconut. For added depth of flavor, toast the shredded coconut lightly before mixing. Use high-quality dark chocolate for the best taste.
