- In a medium mixing bowl, add shredded coconut, almond butter, melted dark chocolate chips, and honey. Stir until all ingredients are well combined and a sticky mixture forms.
- Place the bowl in the refrigerator for about 10 minutes to allow the mixture to firm up slightly, making it easier to roll into balls.
- Remove the mixture from the fridge. Using your hands, scoop out a tablespoon of the mixture and roll it into a small ball. Repeat until all the mixture is used.
- For an extra layer of chocolate, melt some additional dark chocolate chips and dip each coconut ball into the melted chocolate. Let them set on a parchment-lined tray.
- Place the finished coconut balls in the refrigerator for another 10-15 minutes to help the chocolate harden.
- Serve the chilled coconut balls on a platter, or store them in an airtight container in the fridge.
Notes
To ensure perfect chocolate coconut balls, if the mixture is too sticky, add a bit more shredded coconut. For added depth of flavor, toast the shredded coconut lightly before mixing. Use high-quality dark chocolate for the best taste.
