Ingredients

Main Ingredients
  • 1 medium cauliflower head, cut into florets
  • 1 cup grated cheese (cheddar or your favorite blend)
  • 1/2 cup breadcrumbs (seasoned or plain) Panko breadcrumbs can be used for extra crunch
  • 1 large egg, beaten

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the cauliflower florets in boiling water for about 5 minutes until they become tender. Drain and let cool slightly.
  3. Once cool, mash the cauliflower using a masher or food processor until it’s semi-smooth.
  4. In a mixing bowl, combine the mashed cauliflower, grated cheese, breadcrumbs, and beaten egg. Mix until well incorporated.
  5. Using your hands, form the mixture into small balls or patties, about the size of a golf ball.
Baking
  1. Arrange the pops on a lined baking sheet and bake for 20-25 minutes or until golden brown and crispy.
Serving
  1. Serve warm with your favorite dipping sauce, like marinara, ranch dressing, or guacamole.

Notes

For best results, do not overboil the cauliflower and feel free to experiment with different cheeses and seasonings for added flavor. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
